Ingredients:
- 2 ½ lbs. chicken breasts
- Two (2) taco seasoning pkgs
- Two (2) 16 oz cans of your favorite salsa
- Six (6) cups chicken broth
- 1 cup of canned corn, drained and rinsed
- One (1) can of 15oz black beans, drained and rinsed
- 4oz can of mild hatch chilis
- ½ cup cilantro, chopped
Directions:
- Add chicken, taco seasoning and salsa to crockpot
- Mix and turn crockpot on low for four (4) to five (5) hours
- Shred chicken in crockpot
- Add chicken broth, corn, hatch chilis and cilantro
- Cover and turn to high for 30 minutes, until warm
Toppings:
- Corn tortilla strips
Cut three (3) corn tortillas and place in bowl
Drizzle with olive oil, dust with garlic salt and toss
Place in oven till crisp and lightly toasted
- Sour cream
- Sliced jalapenos
- Avocado
