Serves four (4) ppl.
Ingredients:
- Two (2) Two boneless & skinless chicken breasts
 - Duck fat spray
 - Dottie Smoky Kickin Cajun Seasoning, to taste
 - Four (4) pepper jack cheese slices
 - Four (4) hamburger buns
 - Remoulade sauce (see below), to taste
 - Lettuce, shredded
 - Tomatoes, sliced
 - Red onions, sliced
 - Pickles, sliced
 
Remoulade Ingredients:
- One (1) cup mayonnaise
 - Two (2) tbsp ground mustard
 - Two (2) garlic cloves, minced
 - Two (2) tsp. prepared horseradish
 - Two (2) tsp. Worcestershire sauce
 - Two (2) tsp. lemon juice
 - Two (2) tsp. Dottie Smoky Kickin Cajun Seasoning
 - One (1) tbsp. parsley, finely chopped
 - One (1) tbsp. hot sauce
 
Directions:
- In a small bowl, mix all remoulade ingredients well and set aside.
 - Place both chicken breasts on a cutting board. Cut each in half (lengthwise), making a total of four thin chicken breast slices.
 - Lightly spray cut chicken breasts on both sides with duck fat and season with Dottie Smoky Kickin Cajun Seasoning.
 - Place on an oiled cast iron flat top (or skillet) that is on medium-high heat.
 - Prior to being cooked all the way through, place a slice of cheese on each chicken breast to melt.
 - Place remoulade on top and bottom of bun, add lettuce, blackened chicken, tomatoes, red onions and pickles.
 - Enjoy!
