Serves four (4) ppl
Ingredients:
- 1 tbsp. avocado oil
- One (1) red onion, chopped
- One (1) large garlic clove, diced finely
- Leftover brisket, chopped
- Salsa, to taste
- Four (4) large flour tortillas
- Four (4) small flour tortillas
- Four (4) small tosted corn tortillas
- Shredded cheese, to taste
- One (1) 8oz can of Ranch Style Beans
- One (1) 8oz can of Fire Roasted Corn
- Four (4) pats of butter
Directions:
- In a small pot, warm up your ranch style bean.
- In another small pot, warm up your corn.
- Add avocado oil to a cast iron skillet over medium heat and saute your onions. Add chopped garlic and after about 30 seconds, set aside.
- In the same skillet, add leftover brisket, salsa and sauteed onions. Stir until warm.
- Place one large flour tortilla on a cutting board. In the center of the tortilla, add a layer of shredded cheese (approx. 4 inches wide). Add brisket mixture on top of cheese.
- Add one toasted corn tortilla on top of the brisket. Add a layer of ranch style beans and another layer of corn.
- Top with cheese and a small flour tortilla.
- Wrap the edges of the four tortilla around the layers, folding the sides.
- Place on a buttered cast iron flat top and cook until golden on both sides.
- Drizzle with bbq sauce and enjoy!
