Serves approx. 4 ppl.
Pasta Salad Ingredients:
- One (1) lb. tri-color rotini pasta, cooked and cooled.
- Two (2) cups dill pickles, chopped.
- 3/4 cup cheddar cheese, shredded.
- Twelve (12) oz. bacon, cooked and chopped.
Pickle Dressing Ingredients:
- 2/3 cup sour cream
- 2/3 cup Mayonnaise
- 2/3 cup pickle juice
- Three (3) tbsp. fresh dill, chopped.
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. onion Powder
- 1/3 tsp. course black pepper
Directions:
- Cook pasta al dente and set aside to cool.
- Set oven to 350 degrees.
- Place bacon on a baking sheet that is lined with aluminum foil. Once oven temperature is reached, bake bacon until you reach desired doneness. (Approximately 20 minutes)
- Once bacon is cooled, chop and set aside.
- Using a large bowl, fold shredded cheddar cheese, chopped pickles and bacon into your rotini pasta.
- Drizzle 3/4 of the pickle dressing over pasta mixture and toss together. Note: place remaining dressing in a resealable bag and refrigerate.
- Cover and refrigerate.
- Prior to serving, drizzle remaining dressing on pasta and toss well.
- Garnish with fresh dill.
